When Chef Hilary and Jim White were approached about becoming tenants in the new Barnes Street courtyard district, they were shown the drawings of what the development would become — including the freestanding building that would anchor it. That building was going to be their restaurant. They designed it the way they wanted it, built it from the ground up, and four years into their lease they liked what they'd created well enough to buy it. In 2022, Bistro Hilary became theirs completely. Downtown Senoia had the small town charm, the community spirit, and a growing appetite — literally and figuratively — for something more elevated. They believed foodies belonged here. Bistro Hilary was built to prove it.

What comes out of Chef Hilary's kitchen earns that belief every single night. Hand cut frites, French mother sauces, hamburger buns baked from scratch. Custom ice cream flavors made with farm eggs raised specifically for the restaurant. Every bread, every sauce, every dressing, every dessert — made in house. First-time visitors walk in expecting white tablecloths and leave surprised by how unpretentious the whole experience feels. Elevated food, relaxed atmosphere, no performance required.
